Vegan Cinnamon Snails – ready in 30 minutes!

Sometimes you don't have time to wait for the dough to rise, but you still want to treat yourself to fragrant, warm and fluffy cinnamon snails. This recipe is ideal because it doesn't use yeast - the dough is prepared with baking powder, so you can have the snails on the table in just half an hour!

The perfect choice for an unexpected guest, a quick breakfast, or just for those days when you want something sweet right away. 💁🏼‍♀️

Ingredients

For the dough (without yeast!):

  • 250 g plain flour
  • 2 teaspoons baking powder
  • 1 tablespoon cane sugar
  • ½ teaspoon salt
  • 3 tablespoons of vegetable butter (e.g. Flóra/Rama)
  • 120 ml plant-based milk (we like it very much with soy snails)

For the cinnamon filling:

  • 3 tablespoons vegetable butter (melted)
  • 4 tablespoons cane sugar
  • 1 tablespoon ground cinnamon

For the icing:

  • 100 g powdered sugar
  • 2 tablespoons plant-based milk
  • 1 teaspoon vanilla extract (or lemon juice for a fresher taste)


Procedure

  1. Preheat the oven to 180 °C and prepare a baking sheet with baking paper.
  2. In a bowl, mix the flour, baking powder, sugar and salt.
  3. Add the vegetable butter and work it into the flour mixture with your fingers until it forms crumbs.
  4. Gradually add the plant-based milk and mix until a soft, non-sticky dough is formed.
  5. For the cinnamon filling, mix in a second bowl melted vegetable butter with sugar and cinnamon.
  6. Return to the snail dough and roll it out on a floured surface into a rectangle.
  7. Spread the cinnamon filling.
  8. Roll the dough into a tight roll and cut into 8-10 snails.
  9. Place on a baking sheet and bake for 15-18 minutes until golden brown.
  10. Mix for the icing powdered sugar with plant-based milk and vanilla extract
  11. Immediately after baking, pour the glaze over the snails and they're done.


Tips for improvement

  • Add crushed nuts to the filling, we like pistachios the best.
  • Use cardamom for a subtly spicy flavor.
  • Try experimenting with the topping, there are no limits here – you can use orange or lemon juice for a fresh option or maple syrup or honey for a sweeter note.

These quick vegan cinnamon rolls are soft, sweet, and fragrant, even though they don't contain yeast or leavening. A great option when you're short on time but craving something really good.
